Do I need to wrap my ribs in foil?

Wrapping the meat in foil will limit the amount of smoke on the surface of the meat thus yielding a better color and flavor on the final product. It also adds moisture and speeds up cooking time. Wrapping should be done about half way through the cooking process or when internal meat temp is 150-160 degrees.

What is the best way to season ribs?

Mix all of the ingredients—paprika, lemon pepper, brown sugar, black pepper, white pepper, onion salt, garlic, and chili powder—and store the rib seasoning in an airtight container in a cool dark place. Apply the rub to pork with a shaker right before it goes into the smoker, charcoal grill, gas grill, or oven.

How far in advance should you put rub on ribs?

Place the racks of ribs in the refrigerator overnight to let the dry rub flavors penetrate the meat. If you can’t rub the ribs the night before, add the rub at least 1-2 hours prior to smoking. Smoking ribs is rather easy once you understand the basic formula.

Should you cover ribs in the oven?

Once the oven has heated to 300 degrees F, place the pan of ribs (uncovered) in the oven. If cooking Baby Back Ribs, roast the ribs for 1½-2 hours. If cooking Spare Ribs, roast for 2½-3 hours. Halfway through cooking, cover the ribs with aluminum foil to keep them from getting dry.

How long do you cook ribs at 350?

The regular cooking time for pork ribs in the oven at 350 degrees is around 2 hours for baby ribs, 2.5 hours for spare ribs, and 20 to 30 minutes for bone-in country-style ribs until they are tender.
